Ingredients for 1 portion:
1 eating apple
1 scone
1oz butter
1 fl oz rum
1 oz brown sugar
1 fl oz whipping cream
Pinch of cinnamon
Method:
Melt the butter in a frying pan over a medium heat. Cut the scone in
half and lightly fry until golden brown on both sides (this will
be a crouton for
the Apples).
Remove the scone and using the same pan add sliced quarters of your
apple. Cook them until they just start to turn soft at the edges,
then you need to
work quickly.
Add the sugar to the pan and stir gently. Take care
not to burn the sugar at this stage but heat it enough to dissolve.
Next add the
rum to remove the
flavours in the sediment of the pan and then the cream. Bring the
sauce to the boil and serve immediately. Place the apples on the
scone, with
sauce
drizzled all around with the other half of the scone on top.
This
recipe is one I made at Stroud Farmers Market and is quick and easy
to produce.
The butterscotch sauce is truly sexy and if you can’t
be bothered to make anything else then at least have a go at the sauce,
believe me it
will
be worth it!!
