1 tbsp olive oil
1 Red onion
125g mushrooms, chopped
1 Yellow pepper, deseeded and chopped)
4 Small courgettes, thinly sliced
350 g Lamb or Quorn mince
1 tbspn uince jelly
1 apple, peeled cored and choppped
1 pt veg stock
Prepare all vegetables. Heat the olive oil in a deep frying pan. Add the chopped onion and cook untill soft. Turn the pan to half heat and add the rest of the ingredients. Cook and reduce, then serve with creamed potatoes.
