Serves 4 :
4 meringue nests
1 large punnet of strawberries- washed, hulled and quartered
1 punnet of raspberries- washed
A handful of blackcurrants and redcurrants- washed
juice of 2 lemons
1oz icing sugar
teaspoon of crushed black peppercorns
finely chopped basil
Simply place all the berries in a bowl. Add all of the other ingredients and mix together well. Do this gently so as not to mash the berries.
Allow to soak for 2 hours and then serve on top of your meringue nests. Refreshing and light. You may want to add a scoop of your favourite fruit sorbet or ice cream.
